Last Saturday in the middle of Target, I got the urge for Broccoli Cheese Soup. Random, I know. Thank God for smart phones. I found this one from allrecipes.com.
It made a ton, was super simple and the leftovers froze well.
Broccoli Cheese Soup
3-10 oz packages of frozen chopped broccoli
3-14.5 oz cans chicken broth (i always use low-sodium organic)
6 T butter
1 onion, chopped
1/2 C flour
2 C skim milk
11/2 lbs Velveeta (means 3/4 of the hunk of cheesy goodness)
In a pot, simmer the broccoli and broth for about 15 min.
In a separate pan, melt the butter, add the onions and saute for 5 min.
Add the flour to the onions and butter, stirring well.
Pour the milk into the flour and onion mixture slowly, mixing well.
Add this to the pot and stir well.
Add in the cheese and stir till melted.
Add in your spices.
