Thai Chicken Salad

I love Asian food, but it's a genre I forget about when looking for recipes or deciding whats for dinner. I came across this one on Pinterest, and the peanut sauce caught my eye. This was a cinch to whip up for lunch, and the flavors were so fresh.

Don't judge my gluten free chicken tenders I threw in for my chicken. I'm addicted. 
At least their healthy right?!....

Thai Chicken Salad

Shop for:
1 bag of brocoli slaw
1 C sliced cucmber
2 C sliced bok choy
1 C of sliced cooked chicken
1/2 C chopped almonds

juice from 2 limes
2T olive oil
2T low sodium soy sauce
1T honey
2T peanut butter
1t fish sauce 
red pepper flakes to taste

To Make:
Combine salad ingredients in bowl. In a separate bowl whisk together dressing ingredients. 
Combine and enjoy. 

This is not something that I would make ahead. The dressing made the lettuce get soggy pretty quickly.

I have several Asian-inspired recipes that I make on a regular basis. I found a crockpot beef and broccoli on Pinterest that is super easy and delish!
